I use what is called a “screen recording” program. On a Mac the two most popular ones are iShowU and ScreenFlow. I use iShowU, but ScreenFlow has more features. Neither of these are free, however there are free ones such as Jing but you need a flash converter for this one because it records in SWF (a flash file). If you are looking for one, however, and are on a Mac, don’t buy one yet because the next version of Quicktime, shipping w/ Snow Leopard, will have a screen recorder and editor built in
